Vinification: destemming of fresh grapes. Fermentation in stainless steel tank. When reaching the peak temperature, de-massage in a steel tank at controlled temperature at 18 ° C overnight. Pumping over and punching down during the tumultuous phase. Spontaneous fermentation with pied de cuve.
Aging: initially all in steel tanks, after that, the mass is divided between 225 L exhausted barriques and terracotta and porcelain stoneware amphorae, respectively 320 L and 350 L.

Taste: in the first instance, the pleasantness of the fruit dominates the palate. Later, an elegant, silky and soft tannin emerges, typical of the sandy soils of the Roero.
Pairings: it goes perfectly with long-aged cheeses, stuffed pasta or with hearty seasonings and typical Piedmont meat dishes such as braised and roasted. Amazing match with handmade dark chocolate.

For this reason, it is produced guided by the idea that first of all, it must be easy to drink and pleasant on the palate, even if drunk alone.
Our idea is to make a “cult”, usually destined for few occasions, a “best seller” that, democratically, can be drunk every day and with any guest who, of course, will appreciate it!
